1. I'm also one who read the recipe and went a little askew, because I didn't print it or have my computer in the kitchen. I'm a messy cook and that does not go well with a laptop. :) I used 1 can of mushroom soup, 1/2 packet of onion soup mix (to hold back a little too much flavor for my son,and skim milk (just forgot if it was milk or water, but hey, skim milk is pretty much water!). Made for delicious dinner that was quick and easy as I used my own turkey meatballs that I make in large quantities and freeze when I make meatloaves. I had some leftover light mac and cheese and steamed some fresh broc. and carrots.

Unfortunately, my mom wasn't feeling well, so it was just dad and my son. I had mushrooms sliced and ready to mix into hers separately.

Thanks for a great go-to meal. I'm usually pretty picky about wanting to do everything from scratch, but have enjoyed a few meals for ease...this is def. one!

 2. Super easy didn’t have the onion packet so I used some sautéed onion and Worcestershire sauce. Added veggie based meatballs (that I bought on accident) and served over buttered noodles. It was really good and super fast!

 3. This was a good, easy meal- my family (including 2 toddlers) liked it. We served it over egg noodles

 4. Nice and easy. My boys loved these and it didn't take hardly any time. I served over mashed potatoes, mmmmmm.

 5. I tweaked this recipe quite a bit-- adding in sliced mushrooms & onions, baking the meatballs, and then simmering it in the crockpot. We enjoyed these over mashed potatoes. Thanks for the "base" recipe! :)

Tweaks

 1. This recipe is from Peg Bracken's famous "I Hate to Cook" book from 1950s or 1960s. I have used it routinely from 1970 on. There is a 50th anniversary edition of the book out. Everyone should get it. So many easy and good recipes!

 2. I am rating this recipe according to my changes.
It was absolutely YUMMY! I cooked the ground beef as is (no meatballs) with one clove of fresh garlic and a small onion--chopped finely. Seasoned with sea salt, ground black pepper, garlic and onion powder, pinch of red pepper, and pinch of dried parsley. Half-way cooked, I added a handful of sliced, canned mushrooms. After it was finished browning, I drained the fat and substituted the water for beef broth, adding in the soup and dry BEEF ONION SOUP Mix. I brought to a boil and added in McCormick browning seasoning (1 tsp). I simmered for 20 min., adding a little water. Served over white rice. Yes Please!

 3. I made this recipe on 11/11/10 for mine and SO's dinner. I sort of made this recipe as it was written. I wasn't paying too close to the recipe ingredients, and used frozen meatballs instead of the ground beef. But next time, and there will be a next time I'll read it more carefully.:) This recipe took no time at all to put together and with the side dishes dinner was on the table in way less than 30 minutes. Thank you so much for posting and, " Keep Smiling :) "

FAQs

Do I need to cook meatballs before putting in sauce? ›

Cooking them directly in the sauce allows them to absorb the flavors while staying moist and tender. However, if you prefer meatballs with a crusty exterior, you can lightly brown them in a separate pan before adding them to the sauce.

What does adding milk to meatballs do? ›

When it comes to adding liquid to meatball mixtures, milk is often used for its versatility, depth of flavor, and richness. Without the use of milk, you may be faced with a plate of dry meatballs. Milk adds a certain level of moisture that helps produce perfectly tender meatballs.

How do you make meatballs that aren't tough? ›

Add moisture.

Eggs and binders like breadcrumbs mixed with milk all help with keeping meatballs tender and moist, so don't skip any of these.

Is it better to pan fry or oven bake meatballs? ›

Baking will result in meatballs with a crunchy exterior, though the caramelisation achieved from frying will be superior. Baked meatballs take the least amount of effort, as you'll only need to turn them once or twice throughout the cook and you can make a larger batch at once.

Is it better to bake meatballs or cook them in sauce? ›

The best meatballs are tender, baked and browned in a hot oven to seal in all the juices. Simmered in robust sauce for a couple of minutes ensures they soak up all of those saucy flavours, this is an easy dinner recipe that will be a hit with your family!

Is it better to use milk or water in meatballs? ›

While water and broth may keep the meatballs moist throughout the cooking process, milk's extra fat and luscious consistency add an unmatched level of complexity to any classic meatball recipe.

How do you make cooked meatballs taste better? ›

Allowing your meatballs to cook on the stove in a simmering sauce is a great way to flavor the meatballs and the sauce. Whether you are cooking your own meatballs or you bought them, you'll end up with the most tender meatballs. As they simmer, they will soak up so much of that delicious tomato sauce.

Should you use milk or water in meatballs? ›

The Key to Tender Meatballs

Here, we're soaking fresh or dried breadcrumbs in a little milk until the bread becomes soggy, then mixing that right into the meat. This binder (aka panade) helps add moisture to the meatballs and also prevents the meat proteins from shrinking and becoming tough.

How to make meatballs that don't fall apart in sauce? ›

You can do a few things while preparing the meatballs to ensure they don't fall apart once they go into the tomato sauce.
 1. Don't add too much moisture: ...

Do meatballs get more tender the longer they cook in sauce? ›

The longer the simmer, the more tender and succulent the meatballs become. 3. Concentration of Flavors: Simmering at a low temperature for an extended period also encourages the sauce to reduce and thicken.

What is the best binder for meatballs? ›

An egg is usually a good start, as that can help with the tenderness and texture, but the king of meatball binders is breadcrumbs soaked in milk (also known as a panade). Soaking the breadcrumbs first makes them pliable and soggy, which allows them to easily and evenly mix into the ground meat.

Do you beat eggs before adding to meatballs? ›

3) beat the eggs separately before adding them to your meat mixture so it combines better. 6) If you prefer to bake instead of fry them, chill the meatballs for at least an hour before baking. They will hold their shape better.

Why do you put baking soda in meatballs? ›

Baking soda, otherwise known as sodium bicarbonate, appears often in köfte recipes. It raises the PH level of the meat, making it harder for the meat's protein molecules to bond. This in turn allows the meat to retain water as it cooks. And more water means a moist meatball.

How long do raw meatballs take to cook in sauce? ›

How long does it take to cook raw meatballs in sauce? Beef meatballs take a bit longer to become tender, so let them simmer for at least one to one and a half, preferably two hours. Pork meatballs only need about 45 minutes of simmering in the sauce.

Do you have to brown meat before putting in sauce? ›

"The caramelized surface of the meat will lend rich flavor and color to the finished dish." If you are making a slow-cooked recipe that calls for ground beef, like chili, beef stew, or meat sauce, browning the meat beforehand makes a huge difference.

Do you cook meat before adding simmer sauce? ›

It is often preferable to cook the meat and vegetables separate from the simmer sauce at high heat first. Then add the sauce, cover, and simmer over low heat for about 20 minutes, stirring every few minutes and using the time you saved in preparation to make a salad or even catch up on social media.

How long to simmer meatballs in sauce after baking? ›

Step 5: Transfer the meatballs to the sauce and allow them to simmer for at least 1 hour. I usually allow them to simmer for up to 3 hours to really suck in all the flavor.
